Weekly Menu #2

Monday:

  • Breakfast: Eggs (any way they want them)
  • Snack: Veggies, Fruit, Dip
  • Lunch: Homemade Mac and Cheese (I use leftover pasta from the night before)
  • Snack: Toast
  • Dinner: Tacos or Mexican Baked Potatoes (I bake extra potatoes to have on hand)

Tuesday:

  • Breakfast: French Toast
  • Snack: Cheese Quesadillas
  • Lunch: Soup
  • Snack: Popcorn
  • Dinner: Fish

Wednesday:

  • Breakfast: Pancakes and Bacon
  • Snack: Granola with Yogurt or Milk
  • Lunch: Stir Fry
  • Snack: To-Go (We have Penny Whistle Lessons in town)
  • Dinner: Pasta

Thursday:

  • Breakfast: Oatmeal Bar
  • Snack: Rolls with Butter
  • Lunch: Chicken Noodle Soup
  • Snack: Smoothies
  • Dinner: Beef

Friday:

  • Breakfast: Eggs on English Muffins
  • Snack: Rice
  • Lunch: Potluck
  • Snack: Muffins
  • Dinner: Roast Chicken

Saturday:

  • Potluck all the ding-dong-day
  • Dinner: Homemade pizza and salad (I always make extra pizza for snacks and such)

Sunday:

  • Breakfast: frittata (to clean out any veggies and such in the fridge)
  • Potluck the rest of the day
  • Dinner: Spaghetti and red sauce (or Tom is just not happy)

  2. Fritatta’s are great for using up any leftover veg – I have to admit that breakfast’s sometimes become unplanned fritatta’s solely for this purpose!
