Nannie Lu’s Spice Cookies

  • 1 stick butter
  • 4 oz. cream cheese
  • 3 tablespoons vegetable oil
  • 2 eggs
  • 3/4 cup brown sugar
  • 3/4 cup cocoa
  • 3/4 cup honey
  • 2 1/2 – 3 cups flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 1/2 tablespoons rum
  • 2 tablespoons instant coffee powder
  • 3/4 teaspoon cloves
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon black pepper
  • 1/2 pint sour cream
  • 3/4 cup raisins
  • 3/4 cup chocolate chips
  • 3/4 cups toasted nuts

Cream butter and cream cheese. Add oil, eggs, sugar and honey. Add vanilla and rum. Combine all dry ingredients and spices. Add drys to wets alternating with sour cream. Mix in raisins, chocolate chips and nuts. Drop by teaspoonfuls and bake at 350 for 10-12 minutes.

Nannie Re’s Crumb Cake

  • 1 yellow cake mix, prepared as directed

Pour into a 9 x 13 pan and bake for 25 minutes. Meanwhile make crumb topping.

  • 3 sticks butter, cut up
  • 3 cups flour
  • 1/4 teaspoon baking powder
  • 1 cup sugar
  • 1/2 cup brown sugar

Mix dough by hand until blended and moist clumps form. Remove cake from oven. Top with crumbs. Bake 25-30 minutes until cake is done and crumbs are lightly browned. Top with powdered sugar when cool.

Jude’s Famous Chocolate Chip Cookies

  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla
  • 2 cups chocolate chips

Mix dry ingredients. Cream butter and sugars. Add eggs and vanilla. Add drys to wets. Mix in chocolate chips. Drop by rounded tablespoons and bake at 375 for 10 minutes.

Chocolate Chewies

  • 1/4 cup butter
  • 1 can (14 oz.) sweetened condensed milk
  • 2 cups (12 oz.) chocolate morsels
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1/2 cup chopped pecans
  • 60 pecan halves

Combine butter, sweetened condensed milk and chocolate morsels in a heavy saucepan. Stir until melted. Remove from heat. Stir in vanilla, flour and chopped pecans. Drop by teaspoons onto ungreased cookie sheet. Press a pecan half in the exact center of the cookie. Bake at 350 for 7 minutes. Cool on wire rack.

Savory Parmesan Shortbreads

  • 1 3/4 cups flour
  • 3/4 cup Parmesan cheese
  • 1 teaspoon salt
  • 1/2 small clove garlic, minced
  • pinch cayenne pepper
  • 1 cup chilled butter, cut into 1/2 inch cubes

Place all ingredients except for butter in bowl of food processor and pulse until combined. Add butter and pulse until dough begins to come together. Gather dough into a ball and divide in half. Roll each half into a 12 inch log. Cut each log into 1 inch pieces. Roll slices into balls and press into 2 inch diameter round. Bake rounds for 20 minutes until tops are brown. Cool completely.
